Made with 100% Cornish leg of pork & black olives. This salami has no added fat!!! It’s flavour comes from a combination of bruised coriander seed, port & peppercorns. A very delicious low fat salami!

Traditional Coppa
Hand rubbed with cures and spices and left to slowly develop a delicate spicy flavour with a hint of juniper, then coated in freshly ground peppercorns, stuffed into a natural casing and hung to gradually dry and mature in a traditional manor.

Honeyed Coppa
A sweeter cure mix is used for this coppa which is then hand coated in honey and mustard before being stuffed into a natural casing and hung to gradually dry and mature in a traditional manor.

Bresaola
Made with the lean eye muscle from Cornish beef sirloin; traditionally dry cured in salts, herbs & spices, stuffed into natural casings and slowly air dried for several months. A melt in the mouth texture with layers of flavour!
