Deli Farm sits on the windswept hills between Delabole and Camelford, close to the rugged north Cornish coast. Martin & Jean Edwards, the partners of Deli Farm Charcuterie, are making award winning air dried Salami & Joints of Meat, using traditional methods combined with modern technology to create perfect climatic conditions for drying and maturing.


After thoroughly researching air drying techniques and experimenting with recipes we were ready to start selling at the end of February 2006 and 4 months later we won our first awards, 1 gold, 1 silver and best new product at the Taste of the West 2006 awards. We have since then collected many more awards from Taste of the West, Great Taste Awards and The Royal Cornwall. Our proudest moment to date was winning the Champion Product at the 2007 Taste of the West awards with our Coppa Ham.


We use prime cuts of meat that are sourced from selected Cornish producers; this is mixed with freshly ground herbs and spices and carefully hand crafted into natural casings. They are then hung up and left to slowly dry; air dried products have a long shelf life and like a good wine improve with time.


All our salami and hams are made with our own carefully developed recipes some are of a very traditional flavour and some are a little more unusual with an interesting twist to them. When time permits one of our favourite jobs is experimenting with new flavours and meats. See our online shop for product range & pricing.

Our electricity is supplied by and is generated by the wind turbines on Deli Farm.
